Can you house two breeding pairs in a decent size tank? What is the ideal temperature range for the Discus. I’m a Tetra guy, so I know my water is too cool (78 Degrees ) for the Discus.

Correct me if I'm wrong but
From my experience it's best to have about 6 to 8 individuals when starting discus at various sizes some big some medium and so on. Everyone wantes big discus even myself but after learning hard way most of bigger ones from spawn tends to be males and with a tank of only males testosterone grows into aggression. Also as you mentioned of the ranking status i had one that wouldn't grow beyond a certain size and would get bully by rest. I felt sad and removed it. Know what next happened the smallest size one got bullied. Key is to have appropriate stocking requirements and various sizes.
Definitely not 2 in one tank unless its a pair. IMO If you want to grow the 2 individual they should be separated.
