I would with dwarf sagittaria. It will do great with your temp and water parameters. It will also contrast nicely with the stem plants. I like the new driftwood too. Looks great!

Other suggestions would be marsilea minuta or marsilea quadrifolia. Both can do quite nicely in medium light.

Nice selection of plants. I like how the tank opened up after you removed the large swords. For a carpet, if your lighting is not strong enough for the ranunculus to fill in, I would suggest giving pearlweed a try. Plant the stems horizontal so it crawls along the substrate (although it may start to reach for the light and grow vertical). Leaving the front of the tank open without a carpet would also look nice. Tall tanks can definitely be a challenge when trying to grow a nice carpet.
