Friggin making me laugh with your vids bro. This is the second one. The first was your vid with the shark taking a bite outta your fish and then you calmly just saying "fucker". And then this one with you saying " ha ha lemon shark". Just little comments that I see myself making if I were in your position. Thanks for your shows! I subscribed and have watching several. This video reminded me of one of my buddies who frequently brings his glass jar filled with his pre-made ceviche marinade and once we start fishing he fillets a couple and chunks them and places in the glass jar and back in the cooler for approx 30 mins... in fact, am going to forward your video to him and am sure he will subscribe too (he does it with all those species you mentioned!). You're lucky to have suck fertile fishing ground. I like near Lake St Clair on the great lakes and the lakes are so messed up. They had a sewage line break in one of the townships and they dumped millions of gallons of raw shit into the lake. In the summer it smells like diarrhea. It's so polluted we can't swim in the water because of Ecoli. The really messed up thing is the cities drinking water intake is down stream from where they dumped the sewage. Lake Huron is a dead sea because of the Zebra Mussel invasion. They've multiplied by the billions and have sucked the life out of the lake. They're expecting the same thing to happen to Lake Michigan. I use to go fishing and catch all kinds of fish. Walleye Salmon Trout. Now If I go fishing it's just to get out of the house I don't expect to catch much. Don't get me wrong sure in some areas the lakes are ok but over all in my area it sucks. I love fishing so much so I'm thinking about moving.

Not really. They usually just bump it to feel what it is as they don't have appendages. As soon as they feel the hardness, they lost interest. I have the outrigger, so super stable.

All those names getting jumbled between the US and Australia is crazy. It was like they wrote them all down on notecards and then somebody dropped them and mixed them up. I could understand it if there were totally different names but we use the same names but for totally different fish. The guys up on the mainland over here have different names for the baits as well. They are wrong though. LOL.

That's a bummer. Now you have to deal with the psychological effects as well (thinking about getting sick and making yourself sick). My old standby was a dramamine the night before and another about a hour before launching on the boat. Might not be good for the vertigo, but it should keep your stomach settled. After a couple of times you might get to the point where you were.

I used to get motion sickness in general, but after fishing in the ocean a lot, it really has pretty much gone away. I never really had a problem on the kayak because you are constantly occupied with doing things that it keeps your head clear. On a boat, I was definitely popping Dramamine a lot, but now hardly ever. I guess it is something that you can get used to.

The lemon, or to be specific the acid in the lemon juice basically cooks the meat. You cut the meat into small thin pieces so the lemon juice can permeate it thoroughly. Very tasty. Great on a hot day.

Saltwater fish tend to have a lot less transferable parasites than freshwater fish. People have been eating raw fish and ceviche "cooked" fish since the beginning of time. We have pretty clean water compared to a lot of waste water tainted like the main land. I have done quite a bit of traveling around the world and have eaten pretty much everything, so don't really have too much of the fear aspect to worry about. Plus, no chemicals in this nor processed through a bunch of hands and packaging. Who knows where the fish came from that you get at restaurants. Short answer. No. LOL.

Saltwater fish has a lot less parasites than freshwater. Fish has been eaten raw for as long as mankind. Put it this way, what foods can you eat where there isn't a Salmonella risk. Even if you cook it, what about the serving implements, or the person handling it, or your hands, or where your eating, etc. You just can't go Phobia on everything otherwise you will miss out on so much in life. Unless you prep all of your own foods, you are taking a lot more risk than me eating fish right out of the ocean. Think about the minimum wage people that are paid to prepare your food and how much concern they have about your food.

In general yes, but just like if you were on a sailboat/yacht, it would not be an issue. As I did not have a cooler full of filets that would not be measureable to see if they were legal, and I was actually cooking the fish, and the carcass was right there, I am pretty sure that it would not have been an issue.

That's what I do. Chop all the veggies and put them in a plastic container then squeeze the lemons and limes and put the juice in a glass jar. When we get on the water we catch lunch first thing, usually black seabass, snapper of some sort or grouper, and add it to the lime juice and let sit a couple hours in the cooler and continue fishing. By the time we get hungry the fish is ready. Add the fish and citrus juice to the container of veggies, break out the scoops and go to town!

I fish a lot of different techniques, but for a back country trip not too long. Generally just two rods. I add a bait bucket if I am going to be doing live bait fishing, and then a cooler if I am going to be keeping any fish. A cast net, extra gas tank, a tackle box. Not too much stuff. If I am just fun fishing artificials, then it is really light. Maybe ten minutes total. I keep my basic gear in my car so just load up the specialty stuff.

We definitely have some clean water out here. Except for now with the whole month being windy. Now it all looks like murky canal water. It takes a couple of days of calm winds for it to get back to normal again. I can't wait.

I have. More just backpacking, but the place I stayed the guy had a fly rod so caught some Bonefish right at his dock. I think they were trained as I just had to put the lure in the water and they bit. Beautiful out there. A lot of the youtubers are heading over there these days. You guys have a lot better sand flat fishing than we have.

There are a few in Key West, or at least they are spotted every once in a while. They are very skittish though. They become more abundant as you move up the Keys. I don't remember if they are crocs or gators though.

Hobie Adventure Island. It is 16' so pretty big. With the outrigger it is extremely stable. Without it, it is a bit tipsy, but fast.

Nah. Juvenile fish around here aren't too infested with worms. Plus, pretty much all food has bugs in it. All meat, vegetables, processed foods, etc. Most of the fish around the Keys are Sashimi quality and eaten as such (except some of the oily species like Kingfish).

i find tin snips work reallying good after you brain them you snip the spin (right behind the head at the bace so you dont lose meat) the right a cross the gills..it is fast you dont have to worry about cutting your self and i find it bleeds better

Teriffic subject and video! If Sushi, Japan, is raw and Ceviche, Spanish, is well done ( well done, usually at least six hours in the acid bath with those condiments added before serving) then being in the acid bath for half an hour or so is called Kinilaw, Southeast Asian, ( with the "law" pronounced "laou") is medium rare and when available uses calamondin instead of lemon or lime, tomatoes, hot pepper, cucumber, garlic and red pepper. As you said any firm white fish i.e. Scamp, Grouper etc. love your show!

If you are primarily coming down for fishing, I would scrap it and wait for some better weather (if you have the ability to adjust your schedule easily). There is a chance it will clean up a bit, but definitely not going to be the mirror calm stuff that I have been posting lately. If fishing is not a huge deal, then the wind is not that big of a deal. The sun will still be out, the rain will make its quick appearance every day, but it will still be nice for general touristy stuff. If winds are around 10kts or so, it is manageable especially if you just work the shorelines on the leeward side of any of the Keys or bridges.

The lemon/lime juice is acidic, so it basically acts as the catalyst to "cook" the fish. Because I use firm but not dense fish, and cut them up into smaller pieces, the juices are able to permeate the meat all the way through and cook them fairly quickly. The ice just keeps things cool. If you do it, you can tell they are done because they will be white, just like if you steamed them. Give it a try, it is excellent.

I'm not into raw fish, but it is interesting that you "cooked in lemon juice". Did looked cooked. Also, you mentioned a subscriber complaining about your POV camera. Sounds nice (except for the celantro...yuck). My main concern would be parasites and cysts in the fish flesh (like freshwater fish carry).

Yup. What Nature's Finest said. The acids from the citrus lemon/lime do a very good job at "cooking" the small bits of fish flesh. Plus, you get the lemony tang as well. Add all those fresh ingredients, chilled, and on a summer hot day, you can't beat it. Definitely recommend it. Criticism is fine. I am pretty good on my own as you can tell by my fishing style. I am still new to all this video stuff, so always experimenting. I am constantly changing things up so it keeps things interesting for the viewer, as well as for me. Plus, I was careful to not get lumped into only posting reeling in big fish videos that are tough to maintain and to be honest, kind of boring and some what fake.

Here's a suggestion: sashimi up one of those tunas you catch. With a little bit of soy sauce and wasabi on the side and a bed of daikon shredded radishes, sitting on a kayak surrounded by a blue ocean, eight miles offshore... Very hard to beat that.

we fished the surf. if you happen to find an old harnell or harrington,  i never saw one break under any condition. i love how you just love to hang out on the flats.i remember wading the marsh with the mullet, and crabs, and stingarees, and ducks, and the smell of salt water. it was time well spent.

I think it depends on what kind of mood the Redfish are in. Me and my uncle were fishing a school of mullet on a shallow flat, used top water, jerk shad, gulp no luck, threw a gold spoon on and we both hooked up to upper slot reds and I lost one to a huge red. This being out of Matlacha in SWFL.

Love them for trolling. Just have to remember to run a swivel somewhere in line. For other types of fishing, they work well for casting into busting fish out in the blue water. With a little trace of wire they work good for Barracuda as you can really rip them and they don't get torn up by the teeth. No so good for finesse style fishing like you would for Redfish up on the mainland.

As long as you cut the fish into small pieces, like thumbnail size, it will be done in a half an hour or so. Some people will put it in over night. The good thing is that you can't really over cook it so it doesn't really matter. You just want to make sure that the entire piece turns white, just like if you had steamed it. I wear wading shoes, sweat pants, a long sleeve shirt, a neck gator, and a wide brim hat. With SPF60 for the face and hands. If you fish a lot, the sun can be brutal down here.

It will. Cold water fish is probably better, but any fish you would feel comfortable doing a light fry in oil with salt and pepper would work in a ceviche. You just want some sort of non-oily white fish that is not mushy. I would think a trout would be good. Even a smallmouth bass or largemouth bass that is caught from some clean water. Stripers as well.

Yea, they are huge. I like to make sandwiches with them and I can get four sandwiches out of one. Definitely more than a meal. I do love them though.

I fished lower Padre Island for 30 years. Once I saw the Atlantic side here in Florida, Padre doesn't compare. Also the no. 1 fish for number of people fishing is the spec or crappie.

Yea, it doesn't suck. During Hurricanes it can suck a little bit, but the rest of the time pretty good...If you have air conditioning... and don't like snow.

Unfortunately, we don't have any down here in the lower Keys. Mainly, in the Florida Bay and the Keys above Key Largo and the Everglades. I wish we had Redfish, Snook, and Trout.

Key West Kayak Fishing Too funny. Wish I could be out there with ya. I have a Jackson big tuna kayak that I rigged up with an electric minn Kota. Have not taken it out yet. Here in VA, you have to register anything with a motor....yes even an electric tolling motor. Go figure. Just wondering how to eventually down the road...way down the road...set up with a gas motor. Your placement of the motor is perfect. Also want to say....your pretty gutsy guy having your foot in the water while Sharks were around. What do you have if you ever get in trouble out there to get someone to find ya. If you don't have anything....man you really are gutsy!

What Luke C. said. It is doable but not very pleasant. You basically can find some calm water on the leeward (back side of land from the wind) and hit those areas. Fortunately, there are plenty of spots like that in the Keys. The issue though is the commuting back and forth from those spots. You always have to paddle against the wind at some point.
