I have never eaten rays but you just cut the wings off. There is a cartilage in the middle, just take the flesh off either side. Sharks have the ammonia, that's why you have to fin them after catchig.

Kahawai is such an underrated fish in NZ. You are right about it tasting better on day 2 when it comes to eating it raw. We Shashimi it and even day 3 the oil comes out more. An epic video brother. Thank you for taking the time to film, edit and upload

Here we call your "raw fish" Ceviche. It isn't exactly raw as the citrus cooks it. It all looks good, tho. I've got to try your method of smoking fish. I'll probably do it with Stripers.

Yeah, we call it raw fish here even though it's not really raw. I have seen a few recipes on ceviche and it looks really nice, will definitely give it a go.

You both need to chill TF out and hug each other. She's right in that citric acid can denature protein and kill some bacteria, but he's right in that it is still not technically cooked without the application of heat. You cannot kill many parasites or food-borne illnesses like cholera with only citrus juice. Although it can be safe to eat raw fish in ideal conditions, the safest way to eat any flesh from an animal is to heat it to an appropriate minimum temperature or fresh-caught fish may be flash-frozen to below -35 overnight as in sashimi grade sushi. You have to get along with your sister/brother! Peace.

@caleb henrick..... I am most always chill, knowledge, wisdom and common sense seem to do that, I was laughing at your ignorance to actual facts, sighing at your stupidity over your perceived intelligence, neither are meant to be a positive for you.... best of luck in the real world.

@caleb henrick, when common sense and basic reading comprehension become being on a high horse, that is really dumbing down, sorry but I have to laugh and sigh both.

meghan754 oh shut the fuck up lol
meghan754
meghan754 - 4 years ago
@caleb henrick, respectively, Apparently you don't know much, read my original post!!!!!!!!!! Was he fishing for chicken? NOOOO Your ignorance is beyond cooking. Lemon juice does to fish, what heat does, changes the physical properties of the proteins. [ Actually, soaking the fish in lemon juice, actually is a way of cooking the fish, so not raw, technically, but yumm ] What part of that statement is beyond your mental reasoning capacity? It is scientifically/chemically changing the proteins by the use of an acid rather than heat. Popular way of cooking all over the world, but specific geographical regions use more, I believe this type of cooking is the National dish of Portugal. With your thinking, me and the rest to the world know nothing, dream on there caleb. If you would learn to comprehend the written word, maybe knowledge will make impressions upon your thought process, best of luck.
meghan754
meghan754 - 4 years ago
@caleb henrick, Respectfully, you evidently are not a chef, all chefs would know that the acid in lemon juice, actually does cook fish. Fish soaked in pure lemon juice will be cooked, basically the same process as heat , but with acid.
Caleb Henrick
Caleb Henrick - 4 years ago
meghan754 cooking requires heat. The acid just changes the color of the fish but its still raw.

Just found your channel , like your laid back way - don't change a thing .
Went to the Cut for a fish couple of days ago - first time back there in about 20 -25 years couldn't believe the boat traffic there . Before you would be lucky to see one or two boats - this time there were heaps.
Didn't catch anything but had a good time anyway .

Happy New Year to you and all yours pal.. gave the old rod a work out .. I just cant see myself using those big rods for spinner fishing any more when I come home. Maurice Brown

I am currently using a 2 piece 9ft Wright & McGill , eagle claw rod with an Okuma Avenger A55b reel.. Now I am not sure how much this set up would cost back home ( New Zealand ) but when I was there for 3 months last year everything was so expensive in the fishing gear and much worse for tackle .. I think I will get another one before I return for good.. Do you use any lures similar to the Rapala X Rap.??? which can be found on Amazon..?????

Weka Digital Media NZ - 4 years ago
Same to you Maurice, I know, the big rods are hard on my shoulders. I did have a short rod in the car, easier to pull in fish whe they are running. Best day for a long time, take care
