no offense but that's not a gybe/jibe dude, you also shouldn't trim in all the way on a gybe unless your rounding a mark and heading upwind, the way you explained it is a surefire way to capsize

I use your metghod, but a second school of thought recommends to just let the boom fly right across, as it then ends up with no wind in it and is safe. Also, you need to correct the steering for an instant as it comes across and shift body weight.
