How far back did he put the lure??? It matters, based on boat speed, wake etc.
Never gaff a fish "underneath", because if you miss, could easily dislodge the hook. Never gaff it on the shoulder, or anywhere in the eating part. Always under the chin, or throat. This is gaff 101.
If you are going to filet a fish on youtube, maybe learn how to do it first. Go to a fish market or store, or a fishing boat and ask them to show you. It takes a fair while to learn how to do this properly, and a very long time to do it fast and neat, without leaving half the fish on the bone. If you are going to kill an animal to eat, make it worthwhile.

Do you ketch fish almost daily? How did you cook that fish?
On a Dorado, the fillet extends forward on the top of their head nearly to the very mouth of the fish. Probably wasted several pounds of good fish by missing that.
You definitely qualify as a Trumpanzee

how to fillet fish without wasting a criminal amount of it... particularly if you are talking about such an excellent fish as Dorado, an extremely fast growing species and therefore with low mercury content.
Please google videos on how to fillet a fish. Many videos out there on how to fillet each species. Get a cut proof fillet glove to wear when filleting if your new to it. This guy only got half the meat. He missed all the meat toward the head of the fish. There is a long strip of meat almost the whole way up the top side. Dolphin have a large backbone so cutting straight up you miss most of the meat. Just google how to fillet a dolphin and forget you ever watched this video. Not much meat in the head but good for soup.
If tooth critter like wahoo (sashimi!!!) are around go with a wire leader. If not mono with work. I'd fish wire or cable leaders on all my lures if I was sailing unless schools of tuna were solid then I'd put out mono leaders.
Also make sure to gaff from behind the direction your traveling as not to gaff over the line and break the fish off. Kill it how ever you want. For a tooth fish a bat to the head works best as you don't want to anywhere near hundreds of razor sharp teeth until the fish is dead unless you don't mind being airlifted to the hospital of one of these suckers gets a hold of you.
And that includes the head, which is regarded in many cultures as the most nutritious part of the animal.
This is what to do with a fish this size when on passage:
1. Make cevice with lemon/lime juice
2. Pickle/cure/dry fillets
3. Grill/Barbecue fillets
4. Take the bones and anything else and boil to form fish stock
5. Make a chowder/soup/stew using the fish stock

How about:
1. Use a minimum of 100lb test offshore. 150-200 if using a handline (handlines on doubled-up surgical tubing - 6 ft works far better than the biggest Penn real/Rod combo) Why? Because it allows the rig to fight the fish. Once tired you simply hand over hand the line in. Tie a small bell to the surgical tubing to let you know dinner is on.
2. Use very large treble or double hooks and sharpen each point even if they are brand new
3. As noted below, use cheap Gin or Vodka in the gills to dispatch the catch
4. Gaff into the gills
5. Let the catch fully tire before gaffing
6. Fully bleed the catch (especially Tuna) before filleting by tieing off the tail and hanging over the side. Even the smallest catch will bleed profusely and make a bloody mess.
With my rod/reel combo I usually hear...zzzzzzzzz....zzzzzzzz.......zzzzzzzzz.....streeeeetch....snnnnnnap - lost catch
With my handline hear ring, ring, ring....then dinner
