If you run out of ideas: the Platte River might be worth investigating. The northern headwaters are fed by several ranges in Colorado and (I think) Wyoming. Apparently as you enter Nebraska, it flattens out in the plains and can get shallow, but is filled with wildlife. Might be only possible during the spring runoff, so it would take some planning and study.
Oh, and always keep an eye out for those "Bone Tomahawk" guys. ;-)
A possibility other than the Platte for Wyoming might be the Yellowstone. It goes into Montana and North Dakota and joins up with the Missouri. There may be rapids, so that might be a problem with a heavily laden canoe. But apparently the wildlife is very abundant and the fishing is supposed to be excellent. :-)
And I always always on a lookout for bone tomahawk guys. This is why I'll be traveling with Mr Smith and Mr Wesson.
