I use pyro gel now for cooking i bought a stand and then a box of gel tins they are a lot safer than carrying Gas.If im in survival mode its meths i build the whole fire sprinkle meths over it and shoot the ferrocium rod sparks over that.

Uni! (Sea Urchin) its my favorite of all time! I live in hawaii though, and for some reason all of the uni here isn't good to eat. The gonads are an off white/purplish color and are not edible unfortunately.

Half and half works great for the chowder, also boil the snails and pull them out with a toothpick or a knife, cut off the intestinal area, then throw them in your chowder. Onions, carrots potatoes and garlic finely chopped, coriander, bay leaves, cumin, salt pepper, corn kernels, a bit of olive oil or butter, salt and pepper. You can premix some of the dry ingredients. Let the half and half reduce and get ticker, or bring some white all purpose flour, or even heavy cream, then toss everything else in, with the oyster being last.

I don't think I would eat the sea urchin unless I had to... they're just too pretty, and I'm not one for creamy textured food. Very interesting finds in this video, that little octopus was so cool! Also, I I think flour goes in chowder, but I may be mistaken, I haven't made it before. I like the more thin, clear soups better anyway, I may try that recipe with a few substitutions...

HAHA snaaails :) They do look yummy indeed!! Fresh sea urchin is SO GOOD! Outside of a couple US states, Chowders through the coastal regions of Canada and USA are typically a dairy + wheat blend as the soup base making for a thick soup. I would say what you made was a clear soup. Needing to pull those snails out of their shells though clear is the better choice. What about beach water greens? Are there kelp's or sea lettuces there?

I never knew these little snails can be eaten....we have millions of them on the shore but I've never thought they're edible.

Pretty cool, in Cuba sea urchins are only used as chum to catch baitfish, and are seen as a nuisance, given that their spines can be nasty.

I've never eaten urchins up north but I've had them plenty of times in cooler nsw south coast waters. They have shorter spines but bigger bodies, i think the surf smashes needles off. I was introduced to me by maori lads(they call it kina) whilst spearing one day. They said traditionally they switch between eating urchins and abalone as they colonize the same environment; if too many of one species the other has no rock space to glue onto. Urchins are fantastic eating but do especially well in cooler southern waters, reckon you should try them after putting them on ice a little, to chill them down somewhat but dont mix with freshwater.

Good video andy, definitely need to re try the chowder, you mainly use milk and cream 50/50 and a fair bit of butter, cook the oysters in the melted butter then add seasonings, after the oyster cook a little you then add some of the salty juices or a little bit of water and then add in the milk/cream

I had one of those longspine urchins in my aquarium for years, he started small and got to the size of a soccer ball, he was so big I couldnt clean the tank without getting stabbed. They feel like a nasty wasp sting and that barb is so hard to get out. You are a brave man to walk in their habitat

For the cooking you are doing you should go aluminum. Titanium just doesn't heat evenly. You will tell a difference in the cooking.
